The domain

It will take twenty years for the mildness of Anjou to win over Thierry Germain, who arrived at the age of 23 from his native Bordeaux. These are the steps and the elements that guide the Domaine des Roches Neuves: big steps, small steps and small steps. Big steps because Thierry Germain knew how to settle down and grow, until he became smaller than the plant to which he is subjected. It is from now on with wide open eyes that he carries all his attention on his productions and the elements which condition the wine. Small steps because the Domaine des Roches Neuves has understood that biodynamics, more than a method of cultivation, is a method of opening up, which can only be conceived if the team appropriates it and gets involved. Small steps which finally mean not to constrain, not to hurt, not to stress the legs of the vine. Listening to the wine, reminding it of where it comes from and leaving it in its element. For the reds, round tuns, the ones from the Loire. For the whites, oval lightning, the height more than the width.

The wine

The Cabernet Franc of Terres Chaudes is grown on a chalky subsoil called tuffeau, combining clay, sand and limestone. The old vines are about forty years old, and the "Les Terres Chaudes" vintage is not filtered or fined before bottling. The deep, dark color can therefore be slightly cloudy. The wine has a concentrated nose of very ripe black fruits, a full, rich and spicy mouthfeel.
