It will take twenty years to win over Thierry Germain, who arrived from his native Bordeaux at the age of 23, so that the mildness of Anjou can win him over. Small steps because the Domaine des Roches Neuves has understood that biodynamics, more than a method of cultivation, is a method of openness, which can only be conceived if the team makes it its own and gets involved. Small steps that ultimately mean not forcing, not hurting, not stressing the vine's legs. Listening to the wine, reminding it of where it comes from and leaving it in its element. For the reds, round tuns, like those used in the Loire. For the whites, oval tuns, more height than width.
To be enjoyed within two years, we find black cherry, raspberry and redcurrant. A rich wine, persistent in the mouth and full of fruit.
