Located in Puligny-Montrachet, in Burgundy, this estate is part of the heritage of the Carillon family, which has been cultivating vines since the 16th century. Phylloxera and the First World War destroyed the village's vineyards, so the entire Carillon estate had to be replanted with fine pinot after 1918. 1960 marks the end of polyculture and the beginning of the supremacy of Chardonnay on the Carillon estate. In 2010, the estate is separated between the two brothers, François and Jacques.
Puligny-Montrachet is the result of a clever blend of 7 climats, mostly located at the bottom of the hillside, where the clayey marl soils are a bit deeper. Here, as is often the case with the best Burgundy winegrowers, the "village" cuvée must be emblematic of the Domaine's style.
A complex nose: violet, honeysuckle, coriander, pear, plum, brioche notes, sweet almond, licorice, black pepper. On the palate, a superb balance between substance and freshness with a long persistence on the fruit and mineral. Dishes that go well with this wine: firm-fleshed fish rather grilled, or with a light lemon sauce, scampi or scallops in carpaccio...
